Passover And Good Friday: Food For Thought
For many local Christians, good Friday is being observed to commemorate the crucifixtion of Jesus Christ.
For many local Jews, Passover begins today.

Although Lake Elsinore and Wildomar do not have a large Jewish contingency, we thought we would share a roundup of Passover-friendly recipes — some classic and some creative — for Seder and beyond.

24 ounces raisins 5 teaspoons sugar 1 apple, peeled and grated
1. Soak the raisins in warm water for a few minutes. Then change the water and cover with more water. Bring to a boil and simmer, uncovered, for about 10 minutes, or or until they are soft.
2. With a slotted spoon, remove the raisins, toss out most of the excess water, and put the raisins in a food processor with a steel blade. Add the sugar and the grated apple pulp and puree in the food processor to a mud-like texture.
Yield: about 3 cups haroset.

Cast-iron Potato KugelFrom kveller.com
1/4 cup olive oil or schmaltz 2 onions, thinly sliced 2 pounds (6 large) Yukon Gold potatoes, grated or finely shredded 3 eggs, lightly beaten ¼ cup matzah meal 1 rounded teaspoon kosher salt Freshly ground black pepper to taste Minced fresh chives and parsley, for garnish (optional)
1. Preheat the oven to 350˚ F. in a large cast iron pan over medium-high heat, warm the oil or schmaltz. Add the onion and cook until golden brown, 10 minutes.
2. meanwhile, place the shredded potatoes in a colander and squeeze them with your hands to rid them of some of their moisture. Transfer to a bowl and add the eggs, matzah meal, salt, and pepper.
3. Scrape the browned onions into the potatoes and mix well with a fork to combine.
4. Return the mixture to the cast iron pan, smooth the top, and bake until golden on top and crisp at the edges, about 1 hour. Serve hot or let cool and reheat in a 350˚ oven. Shower with the fresh herbs just before slicing and serving.

Matzah BallsFrom My Jewish Learning
4 jumbo egg yolks 1 teaspoon salt pinch cayenne pepper 1 teaspoon parsley 1 tablespoon grated onion 2 tablespoons vegetable oil (or melted chicken fat, if desired) 1/2 teaspoon pareve chicken soup mix (optional) 4 jumbo egg whites, beaten stiffly 3/4 cup matzah meal
Beat the egg whites until stiff and set aside. Beat the egg yolks, salt, parsley, onion, oil, pepper, and soup mix until creamy. Fold the egg whites into the egg mixture. Gradually fold in the matzah meal. Cover and chill for 1-1/2 hours.
Bring a very large pot of water to a rolling boil. Add about 1 teaspoon of salt to the water.
With well oiled hands, make small balls about 3/4 inch in diameter. Drop them into the boiling water. Cover the pot tightly and boil for about 30-40 minutes. Don’t peek!!
Yield: 20 matzah balls

3 large carrots, peeled and chopped 3 medium onions, peeled and chopped 2 pounds sweet potatoes, peeled and thinly sliced 2 pounds yams, peeled and thinly sliced 1 cup (4 ounces) dried apple rings, cut in quarters 1 1/2 cups (8 ounces) pitted prunes 1 cup (4 ounces) dried pears, coarsely chopped 1 cup (4 ounces) dried apricots, cut in half if large 1 cup (4 ounces) dried sweet cherries 3/4 cup (3 ounces) dried sour cherries 1 cup packed dark brown sugar 2 teaspoons ground cinnamon 2 cups orange juice 2 cups white wine (sweet or dry)
Place the carrots, onions, sweet potatoes, yams, dried apples, prunes, dried pears, dried apricots, and dried sweet and sour cherries in the insert of a 5 1/2 to 6 quart slow cooker. Stir to mix. Sprinkle the brown sugar and cinnamon on top. Pour in the orange juice and wine and add enough water to cover. Cover and cook on HIGH for 10 to 11 hours, or until the vegetables are very soft. Serve hot or at room temperature.

1 large piece horseradish root (3/ 1 pound) 1/2 cup liquid sugar 2 medium beets 1 cup water 2 tablespoons coarse salt juice of 2 lemons (6 tablespoons)
Peel and wash horseradish and beets. Grind into large bowl. Add salt, sugar, water, and lemon juice. Add more beets if you desire more color, more water for thinner consistency. Adjust seasonings to taste. Yields 2 cups.

Matzo BreiFrom Epicurious.com 2 sheets of matzo 2 large eggs salt pepper 2 tablespoons vegetable oil
Break 2 sheets of matzo into 1/2″ pieces; place in a medium bowl. Cover with very hot tap water. Let stand for about 30 seconds, then drain. Beat 2 large eggs in another medium bowl; season with salt and pepper. Add drained matzo; mix until combined and a wet batter forms. Heat 2 tablespoons vegetable oil in a large skillet over medium-high heat. Spoon scant 1/4-cupfuls of batter into skillet, making 4 pancakes. Fry, turning once, until golden and just cooked through, about 1 minute per side. Serve with jam, syrup, or whatever the hell you’d like. these rock.

180g caster sugar 1 teaspoon potato flour ½ teaspoon white vinegar ½ teaspoon vanilla extract 2 tablespoons cocoa powder 3 teaspoons ground coffee 80g dark chocolate
Preheat the oven to 130°C. Line two baking trays with non-stick baking paper.
In a large bowl, whisk the egg whites until soft peaks form. while continuously whisking, add the sugar one tablespoon at a time until stiff and satiny shiny. Whisk in the vanilla, potato flour, white vinegar, cocoa powder and two teaspoons of the coffee until combined.
Using a piping bag and a 1cm plain nozzle, pipe 60 small blobs onto the prepared trays around 2.5cm in diameter and 4cm apart.
Bake for 25 minutes. Turn the oven off and with the door slightly ajar, allow the meringues to cool completely. Melt the chocolate and the remaining coffee in a bowl set over saucepan of simmering water. allow to cool, then use to sandwich the meringue bases together.
Makes 30 and will keep for 2 days in an airtight container.

Good Friday prelude to Easter celebration
Good Friday services around the community begin Easter 2012 observances around the community, with worshipers invited to all the special services including the community Good Friday rites.
Community Good Friday
The St. Augustine Community Good Friday Service will be observed at noon today at historic Memorial Presbyterian Church, 36 Sevilla St., in downtown St. Augustine. in addition to the host pastor, the Rev. J. Dudley Weaver Jr., other participating clergy are: the Rev. Tom Willis, Basilica Cathedral of St. Augustine; the Rev. Pat Turner-Sharpton, first United Methodist Church; the Rev. Ruth Jensen-Forbell, first Coast Metropolitan Community Church; the Rev. James Reeher, Grace United Methodist Church; and the Rev. Ron Rawls, St. Paul AME Church.
Music will be provided by Vivace and Ray McDonald, organist and director of music at Memorial. All members of the community are invited to join in this community-wide service. A time of fellowship with light refreshments will follow the service.
Good Friday film
The Lighthouse Church of God, 1230 Kings Estate Road, will have a free showing of the movie, “Jesus” at 7 p.m. today. Refreshments will be available for purchase.
This classic film portrays 3½ years of Jesus’ ministry as told in the Gospel of Luke from the Good News and King James translations of the Bible. Critics suggest that producer John Heyman created a film so true-to-life, you will feel like you are in first-century Palestine. everything from clothing, to customs, to food of the country during that time period was studied to ensure authenticity.

■ Father Thomas S. Willis, pastor of Cathedral Parish, has announced the times for services this holy season.
Today the principal liturgy for the day is the Liturgy of the Lord’s Passion at 3 p.m. with Bishop Estevez as the celebrant. This service includes the proclamation of the passion, veneration of the cross and distribution of Holy Communion. in the evening, Stations of the Cross will be held at 7 p.m.
Holy Saturday, Bishop Estevez will be the principal celebrant for the Easter Vigil — the primary liturgy of the Church in the liturgical year — which will be celebrated at 8:30 p.m.
Easter Sunday Masses at the Cathedral will be at 7, 9 and 11a.m. Mass will be celebrated at St. Benedict the Moor Church, Martin Luther King Avenue at 8 a.m.
There will also be two Masses celebrated on the grounds of the Shrine of Our Lady of La Leche at the Rustic Altar on Easter Sunday. first, there will be a sunrise Mass at 7 a.m. followed by an additional Mass at 10 a.m. Some seating will be provided but those who attend are encouraged to bring lawn chairs.
To conclude the liturgical celebrations of Holy Week and the Triduum, Bishop Estevez will be the principal celebrant for Paschal Vespers on Easter Sunday at 6 p.m. in the Cathedral.

Presbyterian
Ponte Vedra Presbyterian Church, 4510 Palm Valley Road Good Friday rites “Celebrating the Sacrifice of Christ,” will include a simultaneous live painting by artist Romeo Caseria and dramatic presentation of “Mary’s Sorrow” from noon to 12:50 p.m.
Easter Day Easter Day includes three services. the annual Easter Sunrise Service begins at 6:30 a.m. at Mickler’s Beach with a special dramatic presentation of “The Cross Builder.” PVPC Member and “Cross Builder” apprentice, Doug McCary will reprise his role as a Bible times Roman cross builder, busy at his craft. as the carpenter talks to himself while constructing a 14-foot cross from real logs, it becomes apparent that this cross is the one meant for Jesus Christ. the exhibition is a moving narrative, bringing home the reality of Christ’s sacrifice for us all.
Mickler’s Beach is located at the south end of Ponte Vedra Beach off Highway A1A with public restrooms, ample parking and handicapped accessible dune walkover. There is no charge for this event. in case of inclement weather, this service will be cancelled.
Traditional Easter services will be 9 and 10:30 a.m., with Richard Cooper, senior pastor officiating.

I’m excited about what Gateway is offering families this year for good Friday. We’ll have Easter services on Saturday and Sunday, but we’ll offer a unique experience on Friday. From 5-9, we’ll have several “choose-your-own-adventure” type experiences for people to choose from. We’ll have dramas, music, worship, short teachings, short films, audio experience of the cross, art installation and tactile experience (with a several crucification nails from the 1st century), a guided prayer experience and several other options. all these things are happening multiple times during the evening all in different venues. due to the nature of good Friday, many of the venues are not really child appropriate, so we are hosting a family experience in addition to childcare for kids under the age of 4.
The family experience will feature songs and a short film about good Friday (I wrote about it here) which we’ve broken down into parts where we can expound on what was happening and guide families in discussion around the events of good Friday.
In a separate experience, we’re hosting a family worship and communion experience where we’ll teach about communion and allow parents to walk their kids (if they’re ready) to take communion, perhaps many for the first time.
We’re really excited about this event. after its all over, I’ll post our notes and a review in case this is something others may want to use in the future.
